Kale & Egg “Muffins”

Easy, Cheesy and Only 6 Ingredients!

  • 5 Eggs
  • 3/4 Cup Shredded Cheddar
  • 1 Cup Chopped Kale
  • 1/4 Cup Green Onions
  • 2 tsp Salt
  • 1 tsp Pepper

Preheat the oven to 400 degrees. Lightly grease muffin tin. In a large bowl, whisk together eggs. Toss in kale along with salt and pepper. Whisk well. Sprinkle in green onions and cheddar cheese. I personally used an ice-cream scooper to carefully scoop the mixture into the muffin tin.  Bake for 14-15 minutes.  Makes about 6 kale egg cups.
