Easy To Make Salmon and Avocado Bowls

WHAT YOU NEED

Salmon Marinade

  • 2 Salmon Filets, Cubed
  • 3 Tbs Water
  • 2 Tsp Minced Garlic
  • 3 Tbs Sriracha Sauce
  • 4-5 Tbs Soy Sauce
  • 2 Tbs Honey

Rice Bowl and Toppings

  • 3 Cups Cooked Brown Rice
  • 1/2 Avocado, Sliced
  • 1/2 Cucumber, Diced
  • 1 Cup Frozen Mixed Vegetables, Cooked [I opted for the carrots, peas, and corn mixture.]
  • 1 Cup Edamame, Cooked and Shelled
  • Sriracha Mayo Drizze [Optional]
  • 1 Tbs Toasted Sesame Seeds or Red Pepper Flakes [Optional]

WHAT TO DO

STEP 1: Combine marinade ingredients into a medium sized mixing bowl.

STEP 2: Add cubed raw salmon to marinade and stir.

STEP 3: Cover mixing bowl and refrigerate for 30 minutes.

STEP 4: In a medium size skillet, add 1-2 tbs of olive oil and set to medium heat. Remove salmon from refrigerator and add to skillet. Set aside the remaining marinade.

STEP 5: Saute salmon cubes over medium heat and add 3-4 Tbs of marinade to the skillet. Toss salmon cubes and cook evenly. Remove from skillet.

STEP 6: In a separate bowl, combine cooked mixed vegetables and brown rice. Add 1 tbs of soy sauce and mix.

STEP 7: Distribute the cooked brown rice mixture evenly into two bowls. Add salmon.

STEP 8: Top with sliced avocado, edamame, diced cucumber, and drizzle with Sriracha Mayo. Enjoy!

OPTIONAL: Sprinkle red pepper flakes for extra heat or sesame seeds.
